The sirlion, to be found on the back half of the spine, makes a fine roast, or can be trimmed to give steaks with the best blend of substance and flavour.
The steaks are best cooked on a high heat either grilled, or fried with a little oil, for two minutes either side. They should sit for 3 or 4 minutes to relax, before enjoying with the garnish of your choice. Any fat on them will have texture and flavour but if desired can be removed.
