Ideal for the lighter casserole, boeuf bourguignon or braised in the piece with carrots and onions. It is also surprisingly good grilled or fried.

For a rather more elaborate dish, braising steak can be served as a surround to a capital roast; offering as it does a pleasing contrast in both texture and flavour. This was a common practice in medieval times.
