The leanest of all roasting joints, lending itself for slicing for minute steaks or for beef olives; or indeed in strips for stir frying. They may come in the piece up to 6kgs in weight and are very popular for large family gatherings or receptions.
Being so lean and full of flavour they can be used for making carpaccio or bresoala, as well as being ideal for a warm beef salad.
