The sirlion, to be found on the back half of the spine, makes a fine roast, or trimmed to give steaks with the best blend of substance and flavour.

The steaks normally about 1.5cms thick are best cooked on a high heat either grilled, or fried with a little oil, for two minutes either side.  They should sit for 3 or 4 minutes to relax, before enjoying with the garnish of your choice.  Any fat on them will have texture and flavour but if desired can be removed.

Some people ask for them cut 2.5cms thick, weighing about 500gms, for cooking on the barbecue before shaving slices from them.
