Generally considered the first amongst the choice of all the roasting joints.  As previous mentioned, legend has it that after one particularly memorable roasted loin of beef, King Henry 8th rose, and drawing his sword, knighted the acclaimed offering, to be known from then on as Sir Loin.

This cut can be served rolled or on the bone, and can as well include the undercut ,or fillet, rolled in or within the bone. It will cook quickly(about 10 mins/lb-.45gm) in an hot oven and be of a uniform consistency and taste.  For some the best of it is the modest covering of fat, which when seasoned with sea salt, is unequalled for flavour and texture.  It is also quite delicious cold.
