A companion cut to the topside, the silverside is the preferred choice of many for a family roast.  They are of a similar texture and price, with the silverside maybe tasting a little sweeter.

This joint, along with the topside, is often cooked as a pot roast and can also be at it's most succulent when steamed.

Particularly in cold weather we are often asked for it to be salted , which we do for about 10 days.  Before cooking it should be soaked in cold water to remove surplus brine.
