The best of all slow cooks - rich in collagen and with masses of flavour which stirs the imagination . Shin can be cooked in the piece or diced , and we also cut "marrow rounds" or as I prefer it , grown-up osso buco , which thickens and further flavours the sauce .

Once the ingredients are assembled , the rest is easy , leaving in a low oven for as long as you like , providing a great tummy filler for any number on your return .To elicit the greatest flavour it is best cooked the day before and re-heated .

Shin is useful cooked in large quantities , giving a good meal , and plenty for freezing into convenient portions for ready stand-by at a later date . 

Also very popular for an impressive dish ,  is a whole shin or leg , with or without the bone .We cut on Tuesdays , so be sure to tell us in good time if you would like one of these .
