Never enough of these .They make the most wonderful dish , the best of them reduced and reduced again .Hopefully we will share with you some the individual receipes which we are given , and publish them here .
As we seldom get more than two each week there is usually a waiting list , so please be sure to plan ahead and give as much notice as possible when ox-tail is on the menu .
Along with shin , tails will give rise to the most wonderful broth or beef tea , and is well worth trying .
Sometimes we fantasise about producing cattle with two backends , or when a receipe for shin has been on television , an eight legged version .
