The tenderest of all cuts , the fillet (filet) , or undercut , is to be found beneath the sirlion below the spine . Slightly fish shaped when whole , having a head (chateaubriand) , the middle and the tail .

From tartare to beef wellington , the fillet needs minimal cooking to bring out the best of it . "show it the pan" - "walk it through the kitchen" or "speak to it severely" are homilies that emphasise this .

The tails can be cut into small goujons , fried quickly and added to a prepared salad , making a delicious contrast .

We never have enough of this , so to be sure of getting what you want do call one of us . Should one or more whole fillets be required for a special occasion please tell us as soon as you have decided . The weights can vary considerably , between 1.5 kg and 2.25 kg and on account of the cost it is important to get it right .
