Just the job for stews or curries , taken from the neck or as off- cuts from roasting joints , the pieces are of a good size and are well trimmed of all superflous fat and connective tissue ; requiring no further preparation the meat can go straight into the pot or skillet .

Having been hung for three or four weeks the meat will cook in about 3/4s of the time you might expect . Any longer than this and the gravy might have the flavour that should be in meat .

Although most popular as a winter warmer , these pieces could be fried or grilled to make a quick supper especially with a portion of chips from the nearest fish and chip shop .
