Ideal for the lighter casserole or bourginion, or braised in the piece with carrots and onions.

It is also surprisingly good grilled or fried, to which some hungry teen-agers can bear testimony.

For a rather more elaborate dish, braising steak can be served as a surround to a capital roast; offering as it does a pleasing contrast in both texture and flavour.  This was a common practice in mediaeval times.
