All of these are available but not in large amounts, as apart from at Christmas time, only two cattle each a week are produced.

For those in the know, all of these delicacies are sought after and when required it is best to order them.  Demand for liver in particular is resurgent, requiring minimal cooking; it is a popular misconception that liver from older cattle is much stronger than that from calves.

Steak and kidney (kate and sydney) is another popular winter dish and those wishing to do pudding, are welcome to suet.  Any not used would be appreciated by the garden birds.
