Taken from the spare-rib and rolled, the brisket is the best value of all, with the flavour of the rib, and when cooked slowly, the utmost tenderness.  It is normally used as a pot-roast, and is the best of all meals to come home to after a long day out.  It is suprisingly good eaten cold, with chutney or other relishes, providing a substantial meal in minutes.

Know as a Jacob's Ladder, the brisket can be left on the bone, cut to size.  Slow roasted, it makes a fine meal; while for the adventurous it can be used as a complimentary contrast to a steak or roast.

Another cut that is popular and suitable for salting.
